Chef John R. Eboli stepped off the Hyline in 2019 for what was supposed to be a few months on Nantucket, but as the story goes, he’s been here ever since.
Growing up in Queens, New York, with a family that loves food and strong influence from his uncle, a professional chef, the groundwork to John’s path was built from a young age. Even though his two main food groups were bagels and pizza, everything would soon change after moving to the Hudson Valley. This is where John began his professional journey, listening to rock and roll and washing dishes at a small inn. Quickly moving up the ranks, he began to see what food really meant and fell in love with the restaurant world. The silly camaraderie, the intensity of cooking and the unique feeling of belonging.
With a degree from The Culinary Institute of America, his career rapidly expanded. With training from 3 Michelin starred, per se, in Manhattan, critically acclaimed restaurants in the Hudson Valley, and some of Nantucket’s most beloved spots. Spending over 5 years as a private chef, John brings a personable approach unlike any other.
A comedian in the off season, John can also be found doing stand-up at local theaters.
